Nice aquisitions Hedd, the boat looks lovely.
The Bing's definately a suitable case for treatment. I've got a similar model with an oscilating rather than s/v engine. This is it when I got it from OFAS...
Is there a logo stamped anywhere (firebox perhaps - or rather 'firetube'?). If it's BW (Bing Werke) it'll be post 1918, Gebruder Bing and you're looking at pre 1918. Let me know and in the meantime I'll look up the model number.

OK Hedd - the BIng.
If it's a Bing Werke engine it's a series 10/132/ either 3 of 4 depending on the o/all height (33cm or 35.5cm). Unfortunately, the o/all height includes the chimney, as you'd expect!
If it's an older, Gebruder Bing, model, then we're looking at a 130 series either a 130/862 or a 130/863. But here I've got more info about the boiler size! The smaller 862 model has a boiler 8.3cm high x 5.8cm diameter. The 863's boiler is 9.3cm high x 6cm diameter. Do any of these dimensions come close?
Even if it's a post war model, I suspect the boiler dimension would be the same as the early design, so if you can match yours to one of the sizes above, that'll give the size of the missing chimney!
Here's a Bing Werke logo from another one of mine that I happen to have a decent photo of!
Hope all this makes sense!
