I just use trial and error on my Stuarts, set the eccentric so it is at the opposite end from the piston. Plug the airline on at a low pressure, then loosen the eccentric, slip it a fraction of a turn one way, tightern then see if it has any effect. Keep repeating this, but leave the air line on so you can see which way you need to go to make any effect.
It takes a while but thats how I do it

Thats a good little tip Jim, I dont have a sutable compresor at the moment

They run reasonably well on a car emergency compressor Mike.

Here's a pic of mine Mike with the piston rod fully extended, and the flywheel turning clockwise(from the flywheel side). You can just about see the grubscrew- the valve rod has about 1mm travel left before it's fully home in the chest.
